Instructions

Step 1: Prepare the Cake Batter

Preheat your oven to 350°F (175°C). Lightly grease two 8-inch round cake pans and line them with parchment paper to ensure the cakes release easily.

In a medium bowl, combine the cake flour, baking powder, baking soda, and salt, whisking until well blended.  

In a large bowl, blend the butter and sugar until the texture becomes light and airy. Add the eggs one at a time, making sure each is fully incorporated before moving on. Mix in the vanilla and almond extracts to boost the flavor.

Slowly mix the dry ingredients into the wet mixture, alternating with milk, beginning and finishing with the dry ingredients.

Carefully fold in the finely chopped cherries to add vibrant color and delightful bursts of flavor to the batter.

Step 2: Bake the Cake Layers

Divide the batter evenly between the prepared pans.

Bake for 25–30 minutes, checking with a toothpick inserted into the center—if it comes out clean, the cake is ready.

Allow the layers to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 3: Making the Frosting

Beat the softened butter until creamy and smooth.

Gradually add the powdered sugar, one cup at a time, ensuring each addition is fully mixed before adding the next. Then, add the heavy cream or milk, vanilla extract, and a small pinch of salt. Beat the mixture until the frosting becomes light, fluffy, and easy to spread.

Step 4: Assembling the Cherry Chip Cake

Begin by setting the first cake layer on a serving plate or cake stand, then evenly spread a smooth layer of frosting over the top.

Add the second layer and repeat the process, ensuring the sides and top are completely covered with frosting.

Use an offset spatula to evenly spread the frosting, giving it a polished, professional look.

Step 5: Decorating the Cake

Press red velvet crumbs gently onto the sides of the cake for texture and color.

Use a piping bag with a star tip to create whipped cream swirls on the top of the cake.
