Ingredients

4 large eggs (separated)

1 cup granulated sugar

1 cup cake flour (sifted)

1 teaspoon baking powder

1/2 teaspoon cream of tartar

1/4 cup whole milk

1/4 cup vegetable oil or melted butter

1 teaspoon vanilla extract

A pinch of salt

1/2 cup powdered sugar (for dusting)

White pearl candies or sugar pearls (for topping)

Fresh strawberries

Fresh blueberries

Whipped cream or frosting for an extra layer

Instructions

Step 1: Gather Your Ingredients and Tools

Before getting started, double-check that all your ingredients and tools are prepared and within reach.

 

You’ll need the following ingredients: eggs, sugar, flour, milk, oil or butter, vanilla extract, and either baking powder or cream of tartar.

Tools: Mixing bowls, a whisk or electric mixer, a spatula, a cake pan (springform pan works great), and an oven.

Step 2: Preheat the Oven

Preheat your oven to 325°F (160°C). A lower baking temperature ensures the cake bakes evenly without becoming dense.

Lightly grease your cake pan or line it with parchment paper for easy removal.

Step 3: Separate the Eggs

Carefully separate the egg yolks from the whites. Carefully separate the eggs, putting the yolks in one bowl and the whites in a different one.

Be careful not to let any yolk mix with the egg whites, as this can stop them from whipping up correctly.

Step 4: Prepare the Batter

Whisk the Yolks: Blend the egg yolks with sugar, whisking until the mixture becomes silky, light, and creamy in texture.

Incorporate the Wet Ingredients: Slowly stir in the milk, oil or melted butter, and vanilla extract until well combined.

Sift the Dry Ingredients: Gently sift the flour and baking powder into the yolk mixture for a smooth blend. Gently mix until smooth and lump-free.

Step 5: Whip the Egg Whites

Make sure to use a clean, dry bowl and whisk when beating the egg whites.

Mix in a small amount of cream of tartar or a pinch of salt to keep the egg whites stable and fluffy.

Whip the whites until stiff peaks form. This means when you lift the whisk, the whites should hold their shape without collapsing.

Step 6: Fold the Whites into the Batter

Gently fold in a third of the whipped egg whites into the yolk mixture to make the batter lighter and fluffier.z

Carefully fold the remaining egg whites into the mixture with a spatula, being gentle to keep the texture light and airy. Handle carefully to keep the air in the egg whites from collapsing.

Step 7: Pour and Bake

Transfer the batter into your prepared cake pan, using a spatula to smooth out the surface.  

Lightly tap the pan on the counter to release any hidden air bubbles.  

Put the pan into the preheated oven and bake for 35–40 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.

Step 8: Cool the Cake

Allow the cake to cool in the pan for around 10 minutes, then carefully take it out and place it on a wire rack to cool completely.

Allow it to cool completely before decorating to prevent melting or sogginess.

Step 9: Decorate Your Cloud Cake

Dust a thin layer of powdered sugar on top to create a classic and sophisticated touch.z

Top it off with white pearl decorations, fresh berries, or a swirl of whipped cream for an elegant touch.
