Kefir Sheet Cake Recipe

Ingredients

2 ½ cups (310g) all-purpose flour

1 ½ cups (300g) granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup (240ml) kefir (a fermented milk product)

½ cup (120ml) vegetable oil

2 large eggs

1 teaspoon vanilla extract

2 cups (480ml) heavy whipping cream

½ cup (60g) powdered sugar

1 teaspoon vanilla extract

Fresh raspberries

Fresh blueberries

Instructions

1. Prepare the Ingredients

In a bowl, measure out 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and 1 teaspoon of baking soda, then sift them together. Add a pinch of salt.

In another bowl, mix 1 ½ cups granulated sugar, 1 cup kefir, ½ cup vegetable oil (or melted butter), 2 large eggs, and 1 teaspoon vanilla extract. Whisk until smooth.
2. Make the Batter

Slowly mix the dry ingredients into the wet mixture, blending them together gradually. Stir gently until you have a smooth batter, making sure not to overmix.
3. Bake the Cake

Preheat your oven to 350°F (175°C).

Prepare two 9×13-inch baking pans by greasing them and lining them with parchment paper. Pour the batter evenly into the pans and bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool fully on a wire rack before proceeding to the next step.

Steps to Make the Frosting
4. Whip the Cream

In a chilled bowl, mix together 2 cups of heavy whipping cream, ½ cup of powdered sugar, and 1 teaspoon of vanilla extract.

Whip the cream with an electric mixer until it reaches stiff peaks.

Assembling the Cake
5. Layer the Cake

Carefully slice each cake horizontally to create a total of four thin layers.

Place the first layer on a serving plate and generously spread an even layer of whipped cream frosting over the top.

Continue layering by repeating the process with the remaining layers, finishing with a smooth coating of frosting on the top and sides.
6. Add the Toppings

Decorate the cake with fresh strawberries, raspberries, and blueberries.

Optionally, garnish with a few mint leaves for a pop of color.
